Fresh Gazpacho

Prep Time: 10 min | Servings: 4

4 cups Fresh tomato juice (juice approx. 6 tomatoes)
3 cups Tomato, diced
1 1/2 cups Cucumber, peeled and diced
1/2 cup Green bell pepper, diced
1/2 cup Fresh cilantro, chopped
2 Stalks celery, diced
2 Ripe avocados, peeled, pitted and diced
5 Cloves garlic, minced
2 tbsp Olive Oil
1 tbsp Fresh lemon juice
1/2 cup Green onions, chopped (for garnish)

In a large mixing bowl, combine all of the ingredients and mix well. In a blender, add half of the mixture and blend until smooth. Pour blended ingredients into mixing bowl and mix well. Cover and refrigerate for 3 to 6 hours. Serve cold and garnished with chopped green onions.
